    Spicy Meatball Pasta Soup with Cheesy Jalapeño Poppers

    Warm up your taste buds with this hearty meatball pasta soup infused with Italian herbs and a spicy kick from jalapeño poppers. Packed with tender beef meatballs, flavorful pasta, fresh vegetables, and melty mozzarella, this comfort food recipe is perfect for weeknight dinners or cozy family gatherings.

     

    Ingredients:

    1 pound ground beef (lean for a healthier option)

    1/4 cup breadcrumbs (for tender, juicy meatballs)

    1/4 cup grated Parmesan cheese

    1 egg

    2 cloves garlic, minced

    1 teaspoon Italian seasoning

    Salt and pepper to taste

    6 cups beef broth (rich and savory)

    1 can (14.5 oz) diced tomatoes

    1 cup small pasta (ditalini, elbow, or mini shells)

    1 cup frozen mixed vegetables

    1/2 cup sliced jalapeños (fresh or pickled for heat)

    1 cup shredded mozzarella cheese

    Fresh parsley for garnish

     

    Instructions:

    1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix well and shape into 1-inch meatballs.

    2. In a large soup pot, bring beef broth to a boil. Add diced tomatoes and pasta, cooking until the pasta is al dente according to package instructions.

    3. Gently add meatballs to the pot and simmer for 10–15 minutes, until cooked through.

    4. Stir in frozen mixed vegetables and sliced jalapeños. Cook for 5 more minutes until veggies are tender and the jalapeños infuse their heat into the broth.

    5. Ladle into bowls, top generously with shredded mozzarella cheese, and garnish with fresh parsley. Serve hot for the ultimate spicy comfort food experience.
