Garlic Butter Salmon with Spinach & Mushrooms in Creamy Parmesan Sauce
Savor the flavor of this rich and creamy garlic butter salmon recipe pan-seared to perfection and served over a bed of sautéed spinach and mushrooms, then smothered in a luxurious Parmesan cream sauce. Perfect for a quick low-carb dinner or a healthy keto-friendly meal!
Ingredients:
4 salmon fillets (6 oz each)
2 cups fresh spinach leaves
1 cup sliced mushrooms (button or cremini)
2 cloves garlic, minced
½ cup heavy cream
¼ cup grated Parmesan cheese
1 tsp dried thyme
Salt and black pepper, to taste
2 tbsp olive oil
Fresh chopped parsley, for garnish (optional)
Instructions:
1. Season the Salmon:
Sprinkle salmon fillets with salt, pepper, and dried thyme.
2. Pan-Sear to Perfection:
Heat olive oil in a large skillet over medium-high heat.
Sear salmon skin-side down for 3–4 minutes per side until golden and cooked through. Remove and set aside.
3. Sauté the Mushrooms:
In the same skillet, cook the sliced mushrooms until browned and tender.
Add minced garlic and sauté for another minute until fragrant.
4. Wilt the Spinach:
Add spinach leaves and stir until wilted and reduced.
5. Make the Creamy Garlic Parmesan Sauce:
Pour in the heavy cream and bring to a gentle simmer.
Stir in Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
6. Combine & Serve:
Nestle salmon fillets back into the skillet and spoon the creamy mushroom spinach sauce over each piece.
