Easy Stuffed Pepper Casserole Recipe

Ingredients:
1 lb ground beef (or ground turkey for a leaner option)
1 medium onion, chopped
2 cloves garlic, minced
2 cups cooked rice (white or brown)
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 cup bell peppers, chopped (use a mix of red, green, and yellow for flavor & color)
1 tsp Italian seasoning
1 tsp paprika
Salt and black pepper to taste
1 ½ cups shredded cheese (cheddar, mozzarella, or a blend)
Fresh parsley for garnish (optional)
Instructions:
1. Preheat oven to 350°F (175°C). In a large skillet, cook ground beef and onion over medium heat until beef is browned and onions are soft. Add garlic and sauté for 1 more minute.
2. Stir in cooked rice, diced tomatoes (with juices), tomato sauce, bell peppers, Italian seasoning, paprika, salt, and pepper. Mix until fully combined.
3. Transfer the mixture into a greased 9×13-inch baking dish. Spread evenly and top with shredded cheese.
4. Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and golden brown.
5. Let cool slightly before serving. Garnish with chopped fresh parsley if desired.
