Ingredients:

For the Grilled Chicken:

2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp garlic powder

½ tsp paprika

½ tsp salt

½ tsp black pepper

1 tsp lemon juice

For the Salad Bowl:

1 ripe avocado, diced

1 cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

1 cup lettuce or mixed greens (optional)

For the Zesty Dressing:

2 tbsp olive oil

1 tbsp fresh lime juice

1 tsp honey

½ tsp Dijon mustard

Salt & pepper to taste

Directions:

Marinate & Cook Chicken: Rub chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice. Grill or pan-sear over medium heat for 6–7 minutes per side, or until fully cooked and golden. Let rest for 5 minutes, then slice thinly.

Toss the Salad: In a mixing bowl, combine diced avocado, cherry tomatoes, and chopped cilantro. Add lettuce or greens if using.

Whisk the Dressing: In a small bowl, mix olive oil, lime juice, honey, Dijon mustard, salt, and pepper until smooth and emulsified.

Assemble & Serve: Top salad with sliced grilled chicken. Drizzle with homemade lime vinaigrette, toss gently, and enjoy this fresh, flavorful, and protein-packed dish!
