    Creamy Cajun Chicken Alfredo Rigatoni with Mozzarella

    If you’re craving a bold, comforting dinner, this Garlic Alfredo Rigatoni with Cajun Chicken and Mozzarella Cheese is the ultimate creamy and spicy pasta dish. It’s packed with flavor from Cajun-seasoned chicken, smothered in a rich garlic Alfredo sauce, and loaded with melty mozzarella and Parmesan. This cheesy rigatoni recipe is perfect for busy weeknights or cozy weekends!

     

    Ingredients:

    For the Cajun Chicken

    1.25 lbs boneless, skinless chicken breasts, sliced

    1 tbsp olive oil

    1 tbsp Cajun seasoning (plus more to taste)

    1 tsp garlic powder

    Salt & black pepper, to taste

    For the Creamy Garlic Alfredo Rigatoni

    12 oz rigatoni pasta

    2 tbsp butter

    4 cloves garlic, minced

    1 cup chicken broth

    1 cup heavy cream

    2 oz cream cheese (for extra creaminess)

    1 cup shredded mozzarella cheese

    ½ cup grated Parmesan cheese

    Fresh chopped parsley, for garnish

     

    Instructions:

    Step 1: Boil the Rigatoni Pasta
    Cook rigatoni in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Step 2: Cook the Cajun Chicken
    Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken for 5–6 minutes until golden and cooked through. Remove from pan.

    Step 3: Make the Creamy Garlic Alfredo Sauce
    In the same skillet, melt butter and sauté garlic until fragrant (about 1 minute). Add chicken broth and heavy cream. Stir in the cream cheese and whisk until smooth.

    Step 4: Add Cheeses for Extra Creaminess
    Mix in Parmesan and mozzarella cheese. Stir gently until the Alfredo sauce becomes thick and cheesy. Add reserved pasta water as needed to adjust consistency.

    Step 5: Combine Pasta and Chicken
    Return the rigatoni and cooked Cajun chicken to the skillet. Toss well to coat with the creamy sauce. Add extra Cajun seasoning for more heat if desired.

    Step 6: Garnish and Serve
    Serve hot, sprinkled with chopped parsley and extra Parmesan. Enjoy the perfect balance of spicy, creamy, and cheesy in every bite!
