Warm up with this hearty and comforting sausage tortellini soup, made with Italian sausage, cheese tortellini, juicy tomatoes, and fresh greens in a flavorful broth. This easy one-pot soup recipe is perfect for busy weeknights or cozy weekends!

 

Ingredients:

1 lb Italian sausage (mild or spicy, your choice)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

4 cups chicken broth (low-sodium)

1 teaspoon dried Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

10 oz fresh cheese tortellini (refrigerated or frozen)

2 cups fresh arugula or spinach

1/2 cup heavy cream (optional for creamy version)

Freshly grated parmesan cheese for serving

 

Instructions:

1. In a large pot, heat olive oil and cook the Italian sausage until browned. Remove excess grease.

2. Add onion and garlic; sauté until softened.

3. Stir in diced tomatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil.

4. Add cheese tortellini and cook according to package instructions (usually 5–7 minutes).

5. Stir in fresh arugula or spinach until wilted.

6. For a creamy soup, add heavy cream and heat gently without boiling.

7. Serve hot, topped with shredded parmesan cheese and crusty bread.
