    Coconut Cream Pie Bars

    Coconut Cream Pie Bars

    If you love creamy coconut desserts with buttery crusts and dreamy whipped topping, these Coconut Cream Pie Bars are your new go-to! Perfect for parties, summer gatherings, or when you’re craving a tropical sweet treat. With a melt-in-your-mouth coconut custard and toasted coconut garnish, this easy dessert will disappear fast!

     

    Ingredients:

    For the Buttery Crust:

    1 ½ cups all-purpose flour

    ½ cup powdered sugar

    ¾ cup unsalted butter, cold and cubed

    For the Creamy Coconut Custard Filling:

    1 (14 oz) can sweetened condensed milk

    1 ½ cups whole milk

    ¾ cup shredded sweetened coconut

    4 large egg yolks

    ¼ cup cornstarch

    2 tsp vanilla extract

    For the Whipped Cream Topping:

    1 cup heavy cream

    2 tbsp powdered sugar

    Toasted coconut flakes, for garnish

     

    Instructions:

    1. Preheat & Prep the Crust: Preheat oven to 350°F (175°C). In a mixing bowl, combine flour and powdered sugar. Cut in the cold cubed butter until the mixture becomes coarse crumbs. Press it evenly into a 9×13-inch pan.
    Prep Time: 10 minutes

    2. Bake the Crust: Bake for 18–20 minutes, or until lightly golden. Remove from the oven and let it cool.
    Baking Time: 20 minutes

    3. Make the Coconut Custard: In a saucepan, whisk together sweetened condensed milk, whole milk, shredded coconut, egg yolks, and cornstarch. Cook over medium heat, stirring constantly, until thick and bubbly (8–10 minutes). Remove from heat, stir in vanilla extract.
    Cook Time: 15 minutes

    4. Chill the Layers: Pour the warm custard over the cooled crust and spread evenly. Let cool to room temp, then refrigerate until firm – about 3 hours.
    Chilling Time: 3 hours

    5. Whip & Top: Beat heavy cream with powdered sugar until stiff peaks form. Spread evenly over the chilled coconut custard.
    Prep Time: 10 minutes

    6. Garnish & Serve: Sprinkle with toasted coconut flakes, then slice into bars and enjoy your creamy coconut heaven!
    Final Touch: 5 minutes
