8 oz lasagna noodles, broken into smaller pieces
1 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 tsp Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. In a large pot, sauté ground turkey or chicken over medium heat until browned and fully cooked (about 5–6 minutes).
2. Add chopped onions and sliced mushrooms. Cook until softened, about 4–5 minutes. Stir in garlic and cook for 1 more minute.
3. Pour in the vegetable broth and bring to a boil. Add the broken lasagna noodles and Italian seasoning. Cook until noodles are tender, about 10–12 minutes.
4. Reduce the heat and stir in the heavy cream and ricotta cheese. Mix well to create a rich, creamy broth.
5. Add shredded mozzarella and stir until fully melted and combined into the soup.
6. Add salt and pepper as needed. Simmer for a few more minutes to allow all the flavors to blend.
