Creamy Alfredo Lasagna Soup

Ingredients:
1 lb Italian sausage (mild or spicy), casings removed
1 small onion, diced
3 cloves garlic, minced
2 tbsp olive oil
4 cups chicken broth
3 cups whole milk
1 cup heavy cream
8 oz lasagna noodles, broken into bite-sized pieces
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tsp dried basil
1 tsp dried oregano
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
instructions:
1. In a large soup pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles (about 8 minutes).
2. Add diced onion and cook until soft, about 4 minutes. Stir in garlic and sauté for another minute.
3. Pour in the chicken broth and bring to a boil. Add broken lasagna noodles, reduce heat, and simmer for 10–12 minutes or until noodles are tender.
4. Stir in whole milk, heavy cream, Parmesan, mozzarella, basil, and oregano. Cook over low heat, stirring until the cheese melts and the soup thickens slightly (about 5 minutes).
5. Season with salt and pepper to taste. Remove from heat.
6. Garnish with fresh parsley and serve hot with crusty bread or garlic toast!
