Ingredients:

2 medium zucchini (fresh and firm)

Kosher salt, to taste

4 cloves garlic, finely chopped or grated

1/4 tsp. crushed red pepper flakes (plus more for garnish, optional)

4 Tbsp. extra-virgin olive oil, divided

2 oz. shredded mozzarella cheese (about 1/2 cup)

 

Instructions:

1. Slice the zucchini lengthwise into thick “steaks.”

2. Sprinkle both sides with kosher salt and let them sit for 10 minutes to release excess moisture. Pat dry.

3. In a small bowl, mix garlic, crushed red pepper flakes, and 2 tablespoons of olive oil.

4. Heat 1 tablespoon olive oil in a skillet over medium heat. Sear zucchini steaks for about 2-3 minutes per side until golden brown.

5. Brush garlic oil mixture over each steak, then sprinkle with mozzarella.

6. Cover the pan and cook for another 2 minutes, until the cheese melts and becomes bubbly.

7. Drizzle with remaining olive oil and garnish with more red pepper flakes if desired.
