    Cheesy Baked Zucchini Clouds

    Looking for a delicious low-carb appetizer or a creative way to use zucchini? These Cheesy Baked Zucchini Clouds are light, fluffy, and packed with savory flavor! Perfect as a healthy snack, party appetizer, or even a side dish, these baked zucchini bites are irresistibly cheesy and easy to make.

     

    Ingredients:

    2 medium zucchini, finely grated and squeezed dry (for perfect zucchini fritters texture)

    3 large eggs, at room temperature

    100g grated cheese (such as Emmental, Comté, or a cheese blend for rich flavor)

    50g all-purpose flour (for structure)

    1 packet baking powder (10g, for fluffy bites)

    Salt and pepper to taste

    Optional: a pinch of nutmeg, fresh herbs like chives or parsley (for extra flavor)

     

    Instructions:

    1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper or grease muffin tins for easy release.

    2. Grate the zucchini and squeeze out all excess moisture using a clean kitchen towel this is crucial for fluffy, non-soggy zucchini clouds.

    3. In a large mixing bowl, whisk the eggs, then stir in the flour and baking powder until smooth.

    4. Add the grated zucchini, cheese, salt, pepper, and optional herbs or spices. Mix until fully combined.

    5. Spoon the mixture into your muffin tins or onto the baking sheet in small mounds to form cloud-like bites.

    6. Bake for 20-25 minutes or until the zucchini bites are puffed and golden brown.

    7. Allow to cool slightly before serving. These cheesy zucchini clouds are delicious hot, warm, or cold!

     

    Recipe Tips:

    Serve with a garlic yogurt dip or alongside a fresh garden salad for a complete meal.

    Great for meal prep store leftovers in the fridge and reheat gently.
