    Juicy Garlic Parmesan Chicken Meatloaf Recipe

    If you’re craving comfort food with a cheesy, savory twist, this Garlic Parmesan Chicken Meatloaf is your new go-to! Made with ground chicken, Parmesan cheese, and flavorful herbs, this juicy meatloaf is topped with a buttery garlic Parmesan glaze for the ultimate creamy finish. Perfect for weeknight dinners or a hearty family meal!

     

    Ingredients for Garlic Parmesan Chicken Meatloaf:

    For the Meatloaf:

    2 lbs ground chicken (lean and juicy)

    1 cup grated Parmesan cheese (for a cheesy, rich taste)

    ½ cup panko breadcrumbs (adds light crunch)

    2 large eggs (for binding)

    4 cloves garlic, minced (bold garlic flavor)

    1 teaspoon garlic powder

    1 teaspoon onion powder

    ½ teaspoon dried basil

    ½ teaspoon dried parsley

    ½ teaspoon salt

    ½ teaspoon black pepper

    ¼ cup whole milk (keeps it moist)

    For the Creamy Garlic Parmesan Glaze:

    3 tbsp unsalted butter

    2 cloves garlic, minced

    ¼ cup grated Parmesan cheese

    1 tbsp chopped parsley

    Pinch of salt

     

    Directions:

    1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.

    2. In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, black pepper, and milk. Mix just until combined—avoid overmixing.

    3. Shape the meat mixture into a loaf on the baking sheet or press into a loaf pan.

    4. Bake for 40–45 minutes or until the internal temperature reaches 165°F (74°C).

    5. While baking, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1–2 minutes until fragrant. Stir in Parmesan and parsley; cook for another 1–2 minutes until slightly thickened.

    6. Remove meatloaf from oven, brush with the garlic Parmesan glaze, and bake an additional 5–7 minutes.

    7. Let the meatloaf rest for 5 minutes before slicing. Garnish with parsley and serve with mashed potatoes, roasted veggies, or a crisp salad.
