Hearty Slow Cooker Cowboy Casserole

Ingredients:
1 lb (450g) lean ground beef
1 small yellow onion, diced
3–4 medium russet potatoes, peeled and cubed
1 can (15 oz) pinto beans, drained and rinsed
1 can (14.5 oz) diced tomatoes (with juice)
1 cup shredded cheddar cheese
1 can (10.5 oz) cream of mushroom soup (optional for extra creaminess)
½ tsp garlic powder
½ tsp smoked paprika
1 tsp sea salt
½ tsp black pepper
Fresh parsley for garnish
Directions:
Brown the Beef:
In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and onions are softened. Drain excess grease.
Layer the Ingredients in the Slow Cooker:
Place cubed potatoes at the bottom.
Add the browned beef and onions.
Layer with pinto beans and diced tomatoes (with their juices).
Sprinkle with garlic powder, smoked paprika, salt, and pepper.
Optional: Add cream of mushroom soup for extra richness.
Stir gently to combine.
Slow Cook:
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are tender.
Add Cheddar Cheese:
About 15–20 minutes before serving, sprinkle shredded cheddar cheese over the casserole.
Cover and let it melt into gooey goodness.
Garnish & Serve:
Top with fresh parsley and serve warm with crusty bread or a fresh green salad.
