    Crispy Coconut Shrimp with Sweet Chili Mayo Dip

    Ingredients for Crunchy Coconut Shrimp:

    1 pound large shrimp, peeled & deveined (tails on or off)

    1 cup all-purpose flour

    1 teaspoon salt

    ½ teaspoon black pepper

    ½ teaspoon garlic powder

    ¼ teaspoon paprika

    2 large eggs, beaten

    2 cups sweetened shredded coconut

    Vegetable oil (for frying)

    Optional: Fresh lime wedges for serving

     

    Ingredients for Sweet Chili Mayo Dipping Sauce:

    ½ cup mayonnaise

    ¼ cup sweet chili sauce (adjust to taste)

    1 tablespoon lime juice

    1 teaspoon rice vinegar (optional, for extra tang)

     

    Instructions:

    1. Prep the Shrimp:

    Pat shrimp dry with paper towels—this helps the coconut coating stick better.

    2. Season the Flour:

    In a shallow dish, whisk together flour, salt, black pepper, garlic powder, and paprika.

    3. Set Up the Breading Station:

    Dish 1: Seasoned flour

    Dish 2: Beaten eggs

    Dish 3: Shredded coconut

    4. Bread the Shrimp:

    Dredge shrimp in flour, shaking off excess.

    Dip into eggs, then coat generously with shredded coconut—press gently to adhere.

    5. Fry the Coconut Shrimp:

    Heat about 1 inch of vegetable oil in a skillet or deep fryer to 350°F (175°C). Fry shrimp in small batches for 2-3 minutes per side, or until golden, crispy, and cooked through.

    6. Drain:

    Transfer fried shrimp to a wire rack or paper towels to remove excess oil.

    7. Make Sweet Chili Mayo:

    In a bowl, whisk together mayo, sweet chili sauce, lime juice, and optional rice vinegar until smooth.

    8. Serve:
