Ingredients:
For the savory beef burrito filling:
1 lb ground beef
1 tbsp vegetable oil
1 small onion, chopped
2 cloves garlic, minced
1 medium bell pepper, chopped
1 jalapeño pepper, chopped (optional for heat)
1 tsp ground cumin
1 tsp chili powder
½ tsp smoked paprika
Salt and black pepper to taste
½ cup beef broth
1 cup cooked white or Spanish rice
1 cup refried beans (or mashed pinto beans)
For assembling the burritos:
4 large flour tortillas
1 cup shredded cheese (cheddar, Mexican blend, or Monterey Jack)
Fresh chopped cilantro (optional garnish)
Salsa, hot sauce, or guacamole (for serving)
Directions:
1. Prepare the beef filling:
In a large skillet over medium heat, heat the oil. Sauté chopped onion, garlic, and bell pepper for 3–4 minutes.
Add ground beef and cook until browned (7–8 minutes).
Season with cumin, chili powder, paprika, salt, and pepper.
Stir in beef broth and simmer for 5 minutes until slightly reduced.
2. Warm the tortillas:
Heat flour tortillas in a dry skillet for 1–2 minutes to make them soft and pliable.
3. Assemble the burritos:
Spread refried beans in the center of each tortilla.
Top with rice, the seasoned beef mixture, and a generous sprinkle of cheese.
Add cilantro if desired.
4. Roll and crisp the burritos (optional):
Fold in the sides, roll tightly.
For crispy burritos, pan-toast them in a bit of oil for 2–3 minutes on each side until golden brown.
