Honey Lime Chicken Stuffed Avocados with Corn Salsa

Ingredients:
For the Honey Lime Chicken:
1 lb boneless, skinless chicken breasts or thighs, diced
3 tablespoons honey
Juice and zest of 2 fresh limes
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon black pepper
For the Fresh Corn Salsa:
1 cup grilled or canned sweet corn
2 tablespoons red onion, finely chopped
1 tablespoon fresh cilantro, chopped
Juice of ½ lime
Salt to taste
For the Avocado Base:
3 ripe avocados, halved and pitted
Extra chopped cilantro for garnish
Lime wedges for serving
Directions:
Step 1: Make the Honey Lime Chicken
1. In a medium bowl, whisk together honey, lime juice and zest, olive oil, garlic, paprika, cumin, salt, and pepper.
2. Add diced chicken, mix to coat, and let it marinate for at least 15–30 minutes.
3. Heat a skillet over medium-high heat and cook the chicken until browned and fully cooked (about 6–8 minutes). Set aside.
Step 2: Prepare the Corn Salsa
1. In a small bowl, combine corn, red onion, cilantro, lime juice, and a pinch of salt.
2. Mix well and chill while you prepare the avocados.
Step 3: Assemble the Stuffed Avocados
1. Cut each avocado in half, remove the pit, and gently scoop out a little flesh to make room for filling.
2. Fill each avocado half with a generous spoonful of the honey lime chicken.
3. Top with corn salsa and garnish with extra cilantro and lime wedges.
