Creamy Crack Chicken Gnocchi Skillet

Ingredients:
1 lb boneless, skinless chicken breast, diced
1 tsp garlic powder
1 tsp onion powder
1 tbsp fresh parsley (plus more for garnish)
2 cups fresh spinach
1/4 cup sun-dried tomatoes (chopped)
1/2 tsp dried thyme
1/4 cup chicken broth
1 lb potato gnocchi (store-bought or homemade)
1/4 tsp black pepper
1/2 tsp paprika
1/2 tsp salt
2 tbsp olive oil
1 tbsp butter
1/2 cup cream cheese (softened)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Instructions:
1. In a large skillet, heat olive oil and butter over medium heat.
2. Season chicken with garlic powder, onion powder, paprika, thyme, salt, and black pepper.
3. Cook chicken until golden and fully cooked through. Remove and set aside.
4. To the same skillet, add chicken broth, cream cheese, and heavy cream. Stir until smooth and creamy.
5. Add spinach and sun-dried tomatoes, cooking until spinach wilts.
6. Meanwhile, boil gnocchi according to package directions and drain.
7. Add cooked gnocchi and chicken back to the skillet. Toss everything in the creamy sauce to coat.
8. Sprinkle with Parmesan cheese and garnish with parsley before serving.
