Creamy Shrimp Pasta Shells with Spinach & Mushrooms
A rich and flavorful seafood pasta dish made with tender shrimp, savory mushrooms, and fresh spinach all tossed in a luscious Parmesan cream sauce. Ready in under 30 minutes, this easy dinner idea is perfect for weeknights or date nights!
Ingredients (Serves 4):
8 oz medium pasta shells (or your favorite pasta like penne or fettuccine)
1 tbsp olive oil
1 tbsp butter
8 oz shrimp, peeled & deveined
1 small onion, finely diced
2–3 cloves garlic, minced
8 oz mushrooms (cremini or white), sliced
3 cups fresh spinach (or 1 cup frozen, thawed & drained)
1 cup heavy cream (or use half-and-half for a lighter option)
½ cup grated Parmesan cheese
Salt & black pepper, to taste
¼ tsp red pepper flakes (optional, for a kick)
Juice of ½ lemon
Fresh parsley or basil for garnish
Instructions:
Step 1: Cook the Pasta
Boil pasta shells in salted water until al dente. Drain, saving ¼ cup pasta water.
Step 2: Sauté the Shrimp
Heat olive oil in a skillet over medium-high heat.
Season shrimp with salt & pepper. Cook 1–2 minutes per side. Remove & set aside.
Step 3: Sauté the Veggies
Add butter to the same pan. Cook onions for 2–3 minutes until softened.
Stir in mushrooms and cook until golden (5–6 mins). Add garlic and cook 30 seconds.
Step 4: Build the Sauce
Add spinach and cook until wilted. Pour in cream and simmer.
Stir in Parmesan, lemon juice, red pepper flakes, salt, and pepper. Add a bit of pasta water if too thick.
Step 5: Combine & Serve
Return shrimp and pasta shells to the pan. Toss gently in the creamy sauce.
Cook 1 more minute. Garnish with herbs and more cheese. Serve warm!
