    Creamy Chicken Broccoli Bake with Greek Yogurt & Cheese

    Looking for a low-carb dinner packed with protein, fiber, and flavor? This creamy chicken broccoli casserole is the perfect healthy comfort food! Made with Greek yogurt, juicy chicken breast, and tender broccoli florets, this Mediterranean-style bake is cheesy, satisfying, and ready in under 30 minutes. Ideal for busy weeknights or meal prep!

     

    Ingredients:

    2 cups cooked chicken breast (shredded or cubed rotisserie works great!)

    2 cups broccoli florets, lightly steamed

    1 cup shredded mozzarella cheese (or mix with feta for a Mediterranean flair)

    ½ cup grated Parmesan cheese

    ¾ cup Greek yogurt (full-fat preferred for creaminess)

    2 tablespoons olive oil

    2 cloves garlic, minced

    1 teaspoon oregano

    ½ teaspoon thyme

    Salt and pepper to taste

    Optional: ¼ teaspoon red pepper flakes (for a spicy kick)

    Optional garnish: Fresh parsley or a squeeze of lemon juice

     

    Instructions:

    1. Preheat Oven:
    Set your oven to 375°F (190°C).

    2. Cook Chicken & Broccoli:
    Use leftover, grilled, or rotisserie chicken. Steam broccoli for about 3–4 minutes until just tender.

    3. Mix Creamy Yogurt Sauce:
    In a bowl, combine Greek yogurt, olive oil, garlic, oregano, thyme, salt, pepper, and half the Parmesan. Adjust seasoning to taste.

    4. Combine in a Casserole Dish:
    Mix the chicken and broccoli in a baking dish. Pour over the creamy sauce and stir gently to coat evenly.

    5. Top with Cheese:
    Sprinkle mozzarella and feta (if using) over the top. Add the rest of the Parmesan.

    6. Bake Until Bubbly:
    Bake uncovered for 20–25 minutes, until the cheese is golden and melted.

    7. Garnish & Serve:
    Finish with chopped parsley or a squeeze of lemon for a fresh, zesty finish.
