    Savory Avocado and Mushroom & Egg Toast Trio

    Ingredients:

    2 slices hearty bread (sourdough or multigrain work best)

    ½ ripe avocado, mashed or sliced

    3–4 cherry tomatoes, halved

    2 tbsp crumbled feta cheese

    1 cup sliced mushrooms

    2 eggs

    1 tbsp olive oil

    Salt & black pepper to taste

    Fresh parsley, chopped (for garnish)

    Directions:

    Sauté the Mushrooms:
    In a skillet over medium heat, add olive oil and sliced mushrooms. Cook for 5–6 minutes until golden and tender. Season with salt and pepper.

    Scramble the Eggs:
    In a separate pan, scramble the eggs with a pinch of salt and pepper. Cook until light and fluffy.

    Toast the Bread:
    Toast your bread slices until crispy and golden brown.

    Build Your Toast Trio:

    Avocado Toast: Spread mashed avocado on one toast slice. Top with cherry tomato halves and crumbled feta for a classic easy avocado toast.

    Mushroom & Egg Toast: Pile sautéed mushrooms and scrambled eggs on the second slice for a vegetarian protein toast.
