Hearty Vegan Campfire Stew Recipe

Ingredients:
2 cans young green jackfruit, drained
2 cans chopped tomatoes
1 can mixed beans (or baked beans)
1 can chickpeas, drained
1 can kidney beans, drained
1 can whole new potatoes, halved
1 large onion, diced
1 cup sweet corn kernels
1½ cups butternut squash, cubed
1 cup green beans, trimmed
1 cup sliced carrots
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
Seasonings:
1 tsp chili powder (adjust to taste)
1 tsp smoked paprika
3 cloves garlic, minced
1 tsp dried basil
1 tsp ground coriander
1 tbsp vegan Worcestershire sauce (or tamari/soy sauce for umami)
Instructions:
1. Add all the ingredients into your slow cooker or crockpot.
2. Stir well to combine and evenly distribute the seasoning.
3. Set your slow cooker on high for 4 hours, or low for 6–7 hours.
4. Once cooked, gently shred the jackfruit using two forks to create a tender, meaty texture.
5. Serve hot with crusty bread, over rice, or enjoy as-is!
Tips:
For a smoky BBQ twist, add a splash of liquid smoke or your favorite vegan BBQ sauce.
