    Poblano Chicken Tortilla Soup

This Poblano Chicken Tortilla Soup is a crowd-pleasing classic perfect for weeknight dinners, meal prep, or delivering a little love to friends and family. With rich, zesty layers of flavor and a simple crockpot option, it’s no wonder this recipe always earns rave reviews!

    Ingredients:

    1 tbsp olive oil

    1 yellow onion, chopped

    3 poblano peppers, seeded and chopped

    2 garlic cloves, minced

    1 lb boneless skinless chicken breasts

    1 tbsp taco seasoning

    Salt and pepper, to taste

    3 cups red enchilada sauce

    2 cups salsa verde

    3 cups chicken broth

    ¼ cup hot sauce (optional, for spice lovers!)

    4 tbsp butter

    ½ cup chopped fresh cilantro

    1 handful shredded cheddar cheese

    Toppings:

    Tortilla chips

    Plain Greek yogurt or sour cream

    Shredded cheese

    Sliced green onions

    Avocado slices

    Extra cilantro

    Lime wedges

    Instructions (Stovetop Method):

    1. In a large soup pot, heat olive oil over medium heat. Add chopped onion, poblano peppers, and garlic. Sauté for about 5 minutes until soft and fragrant.

    2. Add chicken breasts, taco seasoning, salt, and pepper.

    3. Pour in enchilada sauce, salsa verde, and chicken broth. Add hot sauce (if using) and butter. Stir well.

    4. Bring to a simmer and cook for 15 minutes or until the chicken is fully cooked.

    5. Remove the chicken, shred it with two forks, then return it to the soup.

    6. Stir in fresh cilantro and shredded cheddar cheese.

    7. Serve hot with tortilla chips and your favorite toppings.

     

    Crockpot Instructions (Slow Cooker Method):

    1. Layer onion, poblanos, garlic, chicken breasts, taco seasoning, salt, and pepper in a crockpot.

    2. Pour in enchilada sauce, salsa verde, broth, hot sauce, and butter.

    3. Cook on low for 6–7 hours or high for 3–4 hours.

    4. Shred the chicken, stir in cilantro and cheese, and serve with toppings!
