Hearty Italian Sausage and White Bean Soup

Ingredients:
1 lb Italian sausage (casings removed)
1 medium onion, diced
3 cloves garlic, minced
1 can (15 oz) white beans (drained and rinsed)
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
2 cups fresh spinach
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
Grated Parmesan cheese (for topping)
Instructions:
1. In a large soup pot, brown the Italian sausage over medium heat, breaking it apart as it cooks.
2. Add the diced onion and minced garlic, sautéing until soft and fragrant.
3. Stir in the white beans, diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring everything to a simmer and let it cook for about 15 minutes.
4. Add the fresh spinach and cook for another 5 minutes, until wilted and tender.
5. Ladle into bowls and top with a generous sprinkle of grated Parmesan cheese for a rich, savory finish.
