Ingredients:
2 boneless, skinless chicken breasts
Salt and freshly ground black pepper (to taste)
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups fresh mushrooms, sliced
4 garlic cloves, minced
1 cup low-sodium chicken broth
1/4 cup heavy cream
1 teaspoon dried thyme
3 cups baby spinach
Cooked pasta or rice (optional, for serving)
Instructions:
1. Season the chicken breasts with salt and black pepper.
2. In a large skillet, heat olive oil over medium heat. Add chicken and sear for 5-6 minutes per side until golden and cooked through. Remove from skillet and set aside.
