    Crockpot Cheesesteak Potato Casserole

     

    Looking for an easy slow cooker recipe packed with flavor? This Crockpot Cheesesteak Potato Casserole combines tender potatoes, savory ground beef, colorful bell peppers, and gooey melted cheese into a hearty and satisfying one-pot meal the whole family will love! Perfect for weeknight dinners, potlucks, or meal prep.

    Ingredients:

    1½ pounds ground beef, cooked and drained
    3 bell peppers, thinly sliced (use a mix of red, green, and yellow)
    1 onion, sliced
    1 large scoop of minced garlic
    Steak seasoning, to taste
    4 cups diced potatoes
    1 can cheddar cheese soup
    1½ – 2 cups shredded provolone cheese

    ½ cup sour cream

    Instructions:

    1. Mix the Filling:

    In a large bowl, combine the cooked ground beef, sliced bell peppers, onion, garlic, and steak seasoning. Stir until everything is evenly coated.

    2. Layer the Crockpot:

    Add half the diced potatoes to the bottom of your slow cooker. Top with half the beef and veggie mixture. Repeat the layers with the remaining potatoes and beef mix.

    3. Add Cheddar Cheese Soup:

    Pour the can of cheddar cheese soup over the top. Gently stir to distribute, but don’t overmix the layers.

    4. Slow Cook to Perfection:

    Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the potatoes are fork-tender and the flavors are blended.

    5. Add the Final Touch:

    About 30 minutes before serving, stir in the provolone cheese and sour cream. Let cook until the cheese is melted and bubbly.

    6. Serve and Enjoy:

    Stir gently before serving. Dish out this cheesy crockpot casserole warm and enjoy the perfect blend of Philly cheesesteak flavors and creamy potatoes!
