    Creamy Italian Sausage Ditalini Soup

     

    Looking for the perfect hearty dinner idea for a chilly evening? This Creamy Italian Sausage Ditalini Soup is rich, comforting, and bursting with bold flavor. Loaded with savory sausage, Parmesan cheese, and tender ditalini pasta, it’s the ultimate easy soup recipe to warm your soul.

    Ingredients:

    1 lb Italian sausage, casings removed

    1 tbsp olive oil

    1 small onion, diced

    2 cloves garlic, minced

    1 can (14.5 oz) diced tomatoes, drained

    4 cups chicken broth

    1 cup heavy cream

    1 cup ditalini pasta (or elbow macaroni)

    1 cup shredded Parmesan cheese

    1/2 tsp dried basil

    1/2 tsp dried oregano

    Salt and pepper, to taste

    Fresh parsley, chopped (for garnish)

     

    Instructions:

    1. Brown the Sausage:
    Heat olive oil in a large soup pot over medium heat. Add Italian sausage, crumble it as it cooks, and sauté until browned. Remove sausage and set aside.

    2. Sauté Onion & Garlic:
    In the same pot, add diced onion and minced garlic. Cook until fragrant and translucent, about 3–4 minutes.

    3. Add Broth & Tomatoes:
    Stir in drained diced tomatoes, chicken broth, basil, and oregano. Bring to a gentle boil.

    4. Cook the Pasta:
    Add ditalini pasta to the boiling soup base. Cook until al dente, around 8–10 minutes.

    5. Stir in Cream & Cheese:
    Lower the heat and mix in the heavy cream and shredded Parmesan. Stir until the cheese is melted and the soup is thick and creamy.

    6. Combine with Sausage:
    Return the cooked sausage to the pot and stir well. Season with salt and black pepper to taste.

    7. Serve & Enjoy:
    Ladle the creamy sausage soup into bowls, top with fresh parsley, and serve hot!
