Chicken & Shrimp Stuffed Shells

Ingredients:
Chicken breast, seasoned and baked
Shrimp, sautéed and chopped
Jumbo pasta shells
Onions and sun-dried tomatoes
Tomato paste and chicken stock
Heavy cream and shredded cheese
Baby spinach
Cream cheese
Olive oil and spices
Instructions:
1. Prep & Cook the Protein:
Season chicken and shrimp with olive oil and spices.
Bake chicken at 425°F for 40 minutes; chop into bite-sized pieces.
Sauté shrimp in a pan, then chop it into small pieces.
2. Prepare the Veggies:
Dice onions and chop fresh baby spinach.
3. Make the Sauce:
In the same pan, sauté onions and sun-dried tomatoes.
Stir in tomato paste, then add chicken stock and heavy cream.
Season to taste and slowly mix in shredded cheese until smooth.
Add chopped spinach and let simmer until combined.
4. Cook the Pasta:
Boil jumbo shells according to package instructions; drain and set aside.
5. Make the Filling:
In a bowl, combine chopped chicken, shrimp, cream cheese, a bit of sauce, and shredded cheese.
6. Assemble & Bake:
Spread some sauce on the bottom of a baking dish.
Stuff the shells with the filling and place them in the dish.
Top with more sauce and shredded cheese.
Bake at 350°F for 15 minutes until bubbly and golden.
Serve warm and enjoy the creamy, cheesy goodness!
