Grilled Chicken Avocado Salad with Zesty Lime Dressing

Ingredients:
For the Chicken:
2 chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon lemon juice
For the Salad:
1 large avocado (diced)
1 cup cherry tomatoes (halved)
¼ cup fresh cilantro (chopped)
1 cup lettuce or mixed greens (optional)
For the Dressing:
2 tablespoons olive oil
1 tablespoon fresh lime juice
1 teaspoon honey
½ teaspoon Dijon mustard
Salt & pepper to taste
Instructions:
Marinate & Grill the Chicken:
Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
Grill or pan-cook over medium heat for 6–7 minutes per side until golden brown and cooked through.
Let the chicken rest for 5 minutes, then slice into thin strips.
Prepare the Salad:
In a large bowl, combine diced avocado, cherry tomatoes, and chopped cilantro.
Add mixed greens if desired for extra freshness.
Make the Dressing:
In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined.
Assemble & Serve:
Arrange the sliced chicken over the salad mixture.
