Savory Egg Roll Soup
This Egg Roll-Inspired Soup is packed with all the delicious flavors of an egg roll but in a warm, comforting bowl! It’s a low-carb, high-protein meal that’s easy to make and bursting with ginger, garlic, and sesame goodness. Perfect for a quick weeknight dinner or meal prep!
Ingredients:
1 lb ground beef (or substitute with ground turkey/chicken)
3 cups shredded cabbage (adds fiber and crunch!)
2 medium carrots, chopped (natural sweetness)
1 medium yellow onion, diced
4 cloves garlic, minced (boosts flavor!)
1 tablespoon fresh ginger, minced (adds warmth)
6 cups chicken broth (rich and flavorful base)
2 tablespoons liquid aminos (or soy sauce for umami)
1 tablespoon Sriracha (adjust for spice level)
2 teaspoons toasted sesame oil (deep, nutty aroma)
Salt and black pepper, to taste
2 scallions, thinly sliced (for garnish)
Instructions
1. Brown the Meat
Heat a large pot or Dutch oven over medium heat. Add the ground beef (or turkey/chicken), season with salt and pepper, and cook until browned. Push to one side of the pot.
2. Sauté the Veggies
In the same pot, add the diced onion and cook for 2-3 minutes until translucent. Toss in the chopped carrots and cook for another 2 minutes.
3. Add Garlic & Ginger
Stir in the minced garlic and ginger and cook for about 15 seconds until fragrant.
4. Pour in Broth & Cabbage

5. Simmer to Perfection
Cover the pot (leave the lid slightly open) and simmer for 25 minutes until the cabbage and carrots are tender.
