Crispy Garlic Herb Roasted Potatoes

Ingredients:
2 lbs small potatoes (Yukon Gold or baby red)
3 tbsp olive oil
2 cloves garlic, minced
1 tsp dried thyme
Salt & pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
2. Prepare potatoes: Wash and halve the potatoes if they’re larger, or leave them whole if they’re small.
3. Season: In a large bowl, toss the potatoes with olive oil, minced garlic, dried thyme, salt, and pepper until evenly coated.
4. Roast: Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, or until golden and crispy, flipping halfway through for even browning.
