Juicy Chicken Meatballs with Creamy Ranch Sauce

Ingredients:
For the Chicken Meatballs:
1 lb ground chicken
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 tbsp fresh parsley, chopped (plus extra for garnish)
2 tbsp olive oil for frying
1 egg
1 garlic clove, minced
Salt and pepper, to taste
For the Creamy Ranch Sauce:
1 packet (1 oz) dry ranch seasoning mix
1 1/2 cups chicken broth
2 tbsp butter
1/2 cup heavy cream
1 tbsp all-purpose flour
Salt and pepper, to taste
Instructions:
Prepare the Meatballs: In a bowl, mix ground chicken, breadcrumbs, Parmesan, minced garlic, parsley, egg, salt, and pepper. Shape into 1-inch meatballs.
Cook the Meatballs: Heat olive oil in a skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally until golden brown and cooked through. Remove and set aside.
Make the Ranch Sauce: In the same skillet, melt butter over medium heat. Add flour and cook for 1 minute, stirring to form a roux. Gradually whisk in chicken broth until the sauce thickens (3-4 minutes).
Finish the Sauce: Stir in heavy cream and dry ranch seasoning mix. Simmer for 2-3 minutes until smooth and creamy. Adjust salt and pepper to taste.
Combine and Serve: Add the meatballs back into the skillet, coating them in the creamy ranch sauce. Simmer for 2 minutes. Serve over mashed potatoes, rice, or pasta, garnished with fresh parsley!
