Cheesy Fajita Chicken Casserole

Ingredients:
1 pound chicken breasts, cooked and shredded
1 packet (1 oz) fajita seasoning mix
1 bell pepper (red, yellow, or green), sliced
1 onion, sliced
1 cup cooked rice
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
1/2 cup salsa (mild or spicy)
2 tablespoons olive oil
Instructions:
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a skillet, heat olive oil over medium heat. Sauté bell peppers and onions for about 5 minutes until softened.
In a large bowl, combine shredded chicken, cooked rice, fajita seasoning, sour cream, salsa, sautéed veggies, and half the shredded cheeses. Mix well.
Transfer the mixture into the baking dish and spread evenly. Top with the remaining cheese.
