Hearty Crockpot Cowboy Soup

Ingredients:
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained & rinsed
1 can (15 oz) pinto beans, drained & rinsed
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) corn kernels, drained
1 can (10 oz) diced tomatoes with green chilies
1 can (4 oz) diced green chilies
1 packet taco seasoning mix
1 packet ranch dressing mix
4 cups beef broth
Salt & pepper to taste
Shredded cheddar cheese, sour cream & chopped green onions for garnish
Directions:
In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
Add chopped onion & minced garlic, then sauté for 2-3 minutes until fragrant.
Transfer the beef mixture to a crockpot (slow cooker).
Add diced tomatoes, kidney beans, pinto beans, black beans, corn, diced tomatoes with green chilies, diced green chilies, taco seasoning, and ranch dressing mix.
Pour in beef broth and stir to combine all ingredients.
Season with salt & pepper to taste.
Cover and cook:
Low: 6-8 hours
High: 3-4 hours
Serve hot, garnished with cheddar cheese, sour cream & green onions.
