Garlic Herb Chicken with Roasted Potatoes

Ingredients:
2 large chicken breasts, cut into strips
1.5 lbs baby potatoes, quartered
3 tbsp olive oil
4 cloves garlic, minced
1 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp chili flakes (optional)
Salt and black pepper to taste
1 tbsp butter
2 tbsp fresh parsley, chopped
Directions:
Preheat & Prep: Preheat your oven to 400°F (200°C). In a large bowl, toss baby potatoes with 2 tbsp olive oil, garlic, paprika, oregano, thyme, rosemary, salt, and black pepper.
Roast the Potatoes: Spread them on a baking sheet and roast for 25-30 minutes, stirring halfway for even crispiness.
Sear the Chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken strips, season with salt, pepper, and chili flakes, and cook for 5-6 minutes per side until golden and cooked through.
Garlic Butter Finish: Lower the heat, add the remaining garlic and butter, and toss to coat the chicken in rich, buttery flavor.
Combine & Serve: Add the roasted potatoes to the skillet, gently tossing them with the chicken. Garnish with fresh parsley and serve immediately!
