Authentic Mexican Shrimp Cocktail Recipe
This Mexican Shrimp Cocktail is bursting with fresh flavors and a zesty kick! Perfect for summer gatherings, game nights, or a light and refreshing appetizer. My family begs for this every holiday, but once you try it, you’ll want to make it all the time!
Ingredients:
2 lbs jumbo shrimp, boiled until they curl into a loose “C” shape, then cooled in ice water
2 celery stalks, thinly sliced
1 jalapeño, seeded and chopped
1 cucumber, diced
2 avocados, chopped
1/2 onion, finely chopped
Handful of fresh cilantro, chopped
Zesty Cocktail Sauce:
Juice & zest of 2 limes
Juice of 1 orange
11.5 oz tomato juice
1/2 cup tomato sauce
2 garlic cloves, grated
Hot sauce, salt, and pepper to taste
Directions:
Boil & Chill Shrimp Cook the shrimp in boiling water until they turn pink and curl. Drain and transfer to an ice bath to stop cooking.
Chop & Combine Cut shrimp into bite-sized pieces and mix with celery, jalapeño, cucumber, avocado, onion, and cilantro in a large bowl.
Make the Sauce In a separate bowl, whisk together lime and orange juice, tomato juice, tomato sauce, garlic, hot sauce, salt, and pepper.
Marinate & Serve Pour the zesty cocktail sauce over the shrimp mixture, stir well, and refrigerate for at least 1 hour to enhance the flavors.
Enjoy Cold Serve chilled with crispy tortilla chips or crackers!
