Hearty Chunky Beef and Veggie Casserole
This Chunky Beef and Veggie Casserole is the perfect slow cooker comfort meal, packed with tender beef, hearty vegetables, and rich flavors. It’s a one-pot dish that’s easy to prepare and great for meal prep or family dinners. With a mix of potatoes, carrots, pumpkin, zucchini, and mushrooms, every bite is wholesome and satisfying. Ingredients:
500–800g beef (rump or preferred cut), chopped into large chunks
4 small potatoes, peeled & chopped
2 carrots, sliced
1 cup broccoli (including stems)
1 large brown onion, diced
1 small to medium sweet potato, cubed
1 zucchini, sliced
4 large mushrooms, quartered
1 cup pumpkin, diced
½ cup frozen peas & corn
1 can (400g) chopped tomatoes
1 cup beef stock
1 tsp ground cumin seeds
1 tsp ground coriander
2 tbsp Worcestershire sauce
1 tbsp BBQ sauce
1 tbsp tomato sauce (ketchup)
½–1 tsp onion powder
Veggie salt & cracked pepper, to taste
Optional: Corn flour + water (for thickening)
Instructions:
1. Prep Your Ingredients: Chop all veggies into large chunks.
2. Assemble in Slow Cooker: Add beef, veggies, spices, sauces, and beef stock.
3. Cook Low & Slow: Cover and cook on HIGH for 7 hours until the beef is tender.
4. Thicken if Needed: In the last 1–1½ hours, mix corn flour with water to create a paste and stir in to thicken.
5. Serve & Enjoy: Serve hot with crusty bread, dinner rolls, or enjoy it on its own!
