Ingredients:

3 boneless, skinless chicken breasts (about 1 ½ pounds), pounded to even thickness

½ teaspoon kosher salt

¼ teaspoon black pepper

5 tablespoons unsalted butter, divided

1 medium shallot, diced (about ⅓ cup)

1 teaspoon garlic, minced

3 tablespoons all-purpose flour

2 cups chicken broth

½ cup half-and-half

1 package (16 ounces) potato gnocchi, uncooked

2 cups fresh baby spinach

½ cup Asiago cheese, finely grated

Fresh parsley, chopped for garnish

Instructions:

Prepare the Chicken:

Pat chicken breasts dry and season evenly with salt and black pepper.

In a large non-stick skillet, melt 2 tablespoons butter over medium heat.

Add chicken breasts and cook for 8-10 minutes, flipping halfway, until the internal temperature reaches 165°F.

Transfer chicken to a plate and cover with foil to keep warm.

Make the Sauce:

In the same skillet, melt the remaining 3 tablespoons butter over medium heat.

Add diced shallot and sauté for 3-5 minutes until softened.

Stir in minced garlic and cook for 1 more minute.

Sprinkle in flour and whisk for 1 minute until lightly golden.

Slowly pour in chicken broth, whisking constantly to combine. Cook for 3-5 minutes until the sauce thickens.

Cook the Gnocchi & Finish:

Add half-and-half and uncooked gnocchi to the skillet. Stir well and cook for 5-7 minutes, ensuring the gnocchi is tender.

Stir in baby spinach and Asiago cheese. Cook for another 2-3 minutes until the spinach wilts and the cheese melts into the sauce.

Remove from heat and place the seared chicken breasts on top of the gnocchi mixture.
