    Creamy Slow Cooker Butter Chicken Recipe

     

    This Slow Cooker Butter Chicken is a creamy, flavorful dish that’s perfect for a cozy meal. Made with tender chicken thighs and a blend of aromatic spices, it’s slow-cooked to perfection for rich, melt-in-your-mouth goodness. The velvety sauce pairs beautifully with fluffy rice, making it a family favorite. Easy to prepare, it’s ideal for busy days when you want a hearty, satisfying dinner. Try this classic Indian-inspired recipe for a restaurant-quality dish at home!

    Ingredients:

    2 pounds boneless, skinless chicken thighs, cut into chunks

    1 tablespoon olive oil

    1 onion, finely chopped

    4 cloves garlic, minced

    1 tablespoon grated ginger

    1 tablespoon curry powder

    1 teaspoon ground turmeric

    1 teaspoon ground cumin

    1/2 teaspoon ground cinnamon

    1/2 teaspoon paprika

    1/2 teaspoon cayenne pepper (optional for heat)

    1 can (14 oz) diced tomatoes

    1 cup heavy cream

    1/2 cup chicken broth

    1/4 cup unsalted butter, cut into cubes

    Salt and pepper to taste

    Fresh cilantro for garnish (optional)

    Cooked rice for serving

    Instructions:

    1. Heat olive oil in a skillet over medium heat. Add the chicken chunks and sear until browned, about 5-6 minutes. Transfer to your slow cooker.

    2. In the same skillet, sauté the chopped onion, minced garlic, and grated ginger for 2-3 minutes, until fragrant.

    3. Sprinkle in the curry powder, turmeric, cumin, cinnamon, paprika, and cayenne pepper (if using). Stir and cook for 1 minute to release the spices’ aroma.

    4. Pour the diced tomatoes, heavy cream, chicken broth, and butter into the slow cooker. Stir everything until well combined.

    5. Cover and cook on low heat for 4-6 hours, or until the chicken is tender and infused with flavor.

    6. Season with salt and pepper to taste. Serve over fluffy rice and garnish with fresh cilantro for a burst of freshness.

    Recipe Notes:

    For a lower-calorie version, substitute heavy cream with coconut milk.

    Add a handful of cashews for extra richness and texture.
