Slow Cooker Beef Joint Recipe

Ingredients:
2 tbsp Plain flour
1 tbsp Dried or fresh thyme
1 tbsp Garlic granules
1.5 kg Beef topside joint
1 tbsp Olive oil
3 Garlic cloves, peeled and chopped or crushed
2 Onions, peeled and quartered
3 Carrots, peeled and quartered
400 ml Hot beef stock (see notes)
3 tbsp Cornflour (for the gravy)
Salt and freshly ground black pepper
Instructions:
Prepare the Beef:
1. Combine the flour, thyme, garlic granules, salt, and pepper on a chopping board.
2. Pat the beef topside joint dry with kitchen paper, then roll it in the flour mixture to coat evenly.
Sear the Meat:
3. Heat olive oil in a large frying pan over high heat (or use your slow cooker dish if it’s hob-safe). Brown the beef on all sides until golden.
Cook in the Slow Cooker:
4. Remove the beef and set it aside. Add garlic, onions, and carrots to the pan. Cook for 5-10 minutes until softened.
5. Transfer everything to the slow cooker (or leave in the dish if hob-safe). Pour in the hot beef stock.
6. Cover with the lid and cook:
HIGH: 5-6 hours
LOW: 7-8 hours
Make the Gravy:
7. Transfer the cooked beef to a serving dish, reserving the cooking liquid.
8. Mix cornflour with a small amount of cooking liquid to create a smooth paste. Return this mixture to the rest of the liquid.
Thicken the Gravy:
Option 1: Cook in the slow cooker on HIGH for 30 minutes, whisking every 5 minutes.
Option 2: Heat in a saucepan over medium heat for 5-10 minutes, whisking frequently until thickened.
Serve:
9. Slice the beef and serve with gravy and vegetables.
Oven Method (Without Slow Cooker):
1. After browning the meat and softening the vegetables, transfer them to a lidded casserole dish.
2. Add the stock and bake at 160℃ for 2.5-3 hours until tender.
3. Follow the gravy instructions above using a saucepan.
