    Slow Cooker Pepper Steak with Mushrooms

     

     

    This Slow Cooker Pepper Steak with Mushrooms is a hearty, flavorful dish perfect for busy weeknights or cozy family dinners. Tender strips of beef, colorful bell peppers, and earthy mushrooms simmer in a rich, savory sauce that’s easy to prepare. Serve it over rice or noodles for a complete, comforting meal. With minimal effort and maximum flavor, this recipe is ideal for meal preppers and leftovers taste even better! It’s a must-try for fans of slow-cooked, wholesome meals.

    Ingredients:

    2 lbs beef round steak, cut into thin strips

    2 tablespoons olive oil

    2 bell peppers (1 red, 1 green), sliced into strips

    1 large onion, sliced

    8 oz mushrooms, sliced

    3 cloves garlic, minced

    1 cup beef broth

    1/4 cup soy sauce

    1 tablespoon cornstarch

    1 tablespoon water

    Salt and pepper to taste

    Fresh parsley, chopped (for garnish)

    Directions:

    1. Sear the Beef: Heat olive oil in a skillet over medium heat. Brown the beef strips and transfer them to your slow cooker.

    2. Layer the Veggies: Add bell peppers, onion, mushrooms, and garlic on top of the beef.

    3. Mix the Sauce: In a small bowl, whisk together beef broth and soy sauce. Pour over the beef and veggies.

    4. Cook Low & Slow: Cover and cook on low for 6–8 hours until the beef is fork-tender and veggies are perfectly cooked.

    5. Thicken the Sauce: About 30 minutes before serving, combine cornstarch and water to make a slurry. Stir it into the slow cooker to thicken the sauce.

    6. Season & Serve: Adjust salt and pepper to taste, garnish with parsley, and serve over rice or noodles for a complete meal!

    Variations & Pro Tips:

    Add heat with crushed red pepper flakes or sriracha.

    Boost heartiness by adding sliced carrots or baby potatoes.

    Prep ahead: Brown the beef the night before for quick assembly.
