Ingredients:
1 pound dried lentils (green or brown)
6 boneless, skinless chicken thighs (trimmed of fat, or substitute chicken breast)
2 cartons (32 ounces each) chicken broth
1 can (10 ounces) Rotel diced tomatoes
1 1/2 cups carrots, diced
1/4 cup sofrito (homemade or store-bought)
1 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon Adobo seasoning
1/2 teaspoon kosher salt
Black pepper, to taste
Instructions:
1. Add all ingredients to a 6-quart slow cooker.
2. Cook on high for 4 hours or low for 8 hours until lentils are tender and chicken is fully cooked.
3. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
4. Taste and adjust seasoning as needed. Add more salt, Adobo, or pepper to suit your preferences.
