Slow Cooker Chicken Broccoli and Rice Casserole
This Slow Cooker Chicken, Broccoli, and Rice Casserole is the ultimate one-pot comfort food, perfect for busy weeknights. Ingredients:
1 small onion, chopped
1 cup long-grain brown rice, rinsed and drained (do NOT substitute white rice or other types of rice)
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups low-sodium chicken broth
1 pound boneless, skinless chicken breasts
1 pound broccoli, cut into small florets
1/2 cup plain Greek yogurt (optional, for extra creaminess)
1/2 cup grated Parmesan cheese
1 cup shredded cheddar cheese
Instructions:
1. Prepare the Base:
Place the chopped onion, brown rice, Dijon mustard, garlic powder, dried thyme, salt, and pepper in the bottom of your slow cooker. Pour in the chicken broth and stir to combine.
2. Add the Chicken:
Lay the chicken breasts over the rice mixture. Sprinkle with additional black pepper.
3. Cook on High:
Cover and cook on HIGH for 2 1/2 to 3 1/2 hours, until the chicken is cooked through and the rice has absorbed almost all the broth. (Cooking on low is not recommended to avoid mushy rice.)
4. Prepare the Broccoli:
While the slow cooker finishes, cook the broccoli. Steam it on the stove, in the microwave, or roast it in the oven for the best flavor. (For a quicker option, you can add the broccoli to the slow cooker in the last hour, but it may lose its vibrant green color.)
5. Finish the Dish:
Once the chicken and rice are ready, remove the chicken to a cutting board. Add the Greek yogurt (if using), Parmesan cheese, and cheddar cheese to the rice in the slow cooker. Stir to combine until creamy.
6. Combine and Serve:
Cut the chicken into bite-sized pieces and return it to the slow cooker along with the cooked broccoli. Mix everything together and serve hot.
Notes:
Do NOT substitute white rice or other types of rice; stick to long-grain brown rice for best results.
This recipe is designed for high heat; cooking on low may result in mushy rice.
While slow-cooked rice will naturally be softer than stove-cooked rice, the flavors make up for the texture!
