    This Spaghetti Squash Casserole is the ultimate healthy comfort food, combining tender spaghetti squash with a savory ground beef and marinara filling. Topped with gooey mozzarella cheese, it’s baked to golden perfection for a dish everyone will love. Perfect for low-carb or gluten-free diets, it’s a satisfying alternative to traditional pasta bakes. Quick to make with versatile cooking options, it’s great for busy weeknights.     Ingredients:

    1 spaghetti squash, cooked

    1 pound lean ground beef

    1 onion, diced

    2 cloves garlic, minced

    15 ounces canned diced tomatoes (1 can)

    1 tablespoon tomato paste

    1 cup marinara sauce (or your favorite pasta sauce)

    1 teaspoon Italian seasoning

    1 ½ cups shredded mozzarella cheese

    Instructions:

    1. Cook the Spaghetti Squash:

    Preheat your oven to 375°F (190°C).

    Cut the squash in half, remove seeds, and bake until tender, or use the microwave for a quicker option (instructions below). Once cooked, scrape out the strands with a fork and set aside.

    2. Prepare the Filling:

    In a medium saucepan, cook ground beef with onion and garlic until browned and no pink remains. Drain any excess fat.

    Add canned diced tomatoes, tomato paste, marinara sauce, and Italian seasoning. Simmer for about 5 minutes to let the flavors blend.

    3. Assemble the Casserole:

    Stir the cooked spaghetti squash into the meat sauce.

    Transfer the mixture to a casserole dish (or scoop it back into the squash shells for a fun presentation).

    Top with shredded mozzarella cheese.

    4. Bake:

    Bake for 20 minutes, or until the cheese is golden and bubbly.

    Oven Directions: Bake squash at 375°F for 40-50 minutes.

    Microwave Directions: Place squash halves in a microwave-safe dish with a little water, cover, and microwave for 8-10 minutes or until tender.
