Healthy Crockpot Lasagna Recipe

Ingredients:
Meat Sauce
2 tbsp olive oil
1 lb extra lean ground beef
1/2 lb hot Italian sausage
1 onion, diced
1 celery stalk, chopped
1 green bell pepper, diced
1 zucchini, diced
1/4 cup matchstick carrots
2 garlic cloves, minced
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
1 tbsp dried oregano
1 tbsp dried basil
2 tsp parsley
Ricotta Layer
2 cups ricotta cheese
2 kale stalks, stems removed and wilted
1/2 cup mozzarella cheese
1/4 cup Parmesan cheese
2 tsp garlic powder
Salt and pepper, to taste
1 egg
Lasagna Layers
1 package Catelli Gluten-Free Lasagna Noodles
2 cups mozzarella/cheddar mix
2 tbsp Parmesan cheese
Instructions:
Step 1: Make the Meat Sauce
1. Heat olive oil in a large pot over medium-high heat.
2. Add ground beef and sausage, cook until browned, then drain excess fat and set aside.
3. In the same pot, sauté onion, celery, bell pepper, zucchini, and carrots for about 5 minutes or until onions become translucent.
4. Stir in garlic, crushed tomatoes, tomato paste, oregano, basil, and parsley. Let the sauce simmer on medium-low heat for 15 minutes.
Step 2: Prepare the Ricotta Mixture
1. In a bowl, combine ricotta cheese, wilted kale, mozzarella, Parmesan, garlic powder, salt, pepper, and egg. Mix until well blended.
Step 3: Assemble the Lasagna in the Crockpot
1. Spread 1/4 cup of meat sauce on the bottom of your slow cooker.
