    Slow Cooker Chicken Cacciatore Recipe

     

    This Slow Cooker Chicken Cacciatore is a hearty and flavorful Italian-inspired dish that’s perfect for busy weeknights. Tender chicken breasts or thighs simmer in a rich tomato sauce with mushrooms, olives, and capers, creating a deliciously savory base. Adding spaghetti noodles and fresh spinach makes it a complete one-pot meal everyone will love. Easy to prepare and packed with wholesome ingredients, it’s a true comfort food classic. Serve it with grated Parmesan and fresh thyme for an extra touch of elegance!

    Ingredients:

    3-4 boneless skinless chicken breasts (or chicken thighs)

    ½ cup water

    1 tablespoon flour

    1 (15-ounce) can diced tomatoes

    ½ cup sliced mushrooms

    ½ cup kalamata olives

    ¼ cup capers

    1 tablespoon minced garlic

    1 teaspoon salt (adjust to taste)

    ¼ teaspoon black pepper (adjust to taste)

    2 teaspoons Italian seasoning

    8 ounces thin spaghetti noodles

    2 ½ cups chicken broth

    2 cups fresh baby spinach (packed)

    12 ounces tomato paste (one 12-ounce can or two 6-ounce cans)

    Instructions:

    1. Prepare the Slow Cooker: Lightly grease the slow cooker. Add water and whisk in flour until smooth.

    2. Layer Ingredients: Arrange chicken breasts or thighs in a single layer. Top with diced tomatoes, mushrooms, kalamata olives, capers, minced garlic, salt, black pepper, Italian seasoning, and chicken broth.

    3. Cook Low and Slow: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and infused with flavor.

    4. Add Pasta and Greens: Uncover and stir in spaghetti noodles, fresh spinach, and tomato paste. Cover again and cook for an additional 15-20 minutes, or until noodles are cooked to your liking.

    5. Serve and Garnish: Stir well before serving. Optional: top with grated Parmesan cheese, fresh thyme, and cracked black pepper for a gourmet finish.

    Notes:

    This dish pairs perfectly with crusty bread or a light side salad.
