    Slow Cooker Irish Beef Stew Recipe

     

    This Slow Cooker Irish Beef Stew is the ultimate comfort food, packed with tender beef, hearty potatoes, and vibrant veggies. Infused with the rich flavors fresh herbs, and a savory tomato broth, it’s a meal that warms the soul. Perfect for chilly evenings or a cozy family dinner, this stew is easy to prepare and slow-cooks to perfection. The combination of rustic ingredients and slow simmering creates a rich, flavorful dish. Pair it with crusty bread for a satisfying and wholesome meal!

    Ingredients:

    3 pounds stewing beef, cubed

    10 red new potatoes, halved (skins on)

    1/2 onion, diced

    3 large carrots, chopped into big pieces

    4 garlic cloves, minced

    2 celery stalks, sliced thin

    1/3 cup all-purpose flour

    4 tablespoons olive oil

    1 cup mushrooms, halved

    2 cups beef broth

    2 cans tomato sauce

    3 bay leaves

    1 sprig thyme and 1 sprig rosemary

    1 tablespoon salt and 1 teaspoon pepper

    Instructions:

    1. Layer the Veggies: Place potatoes, onion, carrots, garlic, and celery in the bottom of an 8-quart slow cooker. Add the bay leaves.

    2. Prep the Beef: Season the beef cubes with salt and pepper. Toss with flour to coat evenly.

    3. Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Sauté the beef in batches until browned on all sides. Add more olive oil if needed.

    4. Assemble in the Slow Cooker: Transfer the browned beef to the slow cooker. Add the halved mushrooms on top.

    5. Prepare the Sauce: In a bowl, mix beef broth and tomato sauce. Pour this savory mixture into the slow cooker.

    6. Add Herbs: Place thyme and rosemary sprigs on top. Cover with the lid.

    7. Cook to Perfection: Cook on low heat for 8 hours or high heat for 4 hours until the beef is tender and flavors meld beautifully.
