    Ingredients:

    For the Pasta and Beef:

    12 ounces cheese-filled tortellini

    1 pound thinly sliced beef (sirloin or ribeye)

    1 medium onion, thinly sliced

    1 green bell pepper, thinly sliced

    1 tablespoon olive oil

    1 teaspoon garlic powder

    ½ teaspoon smoked paprika

    Salt and pepper to taste

    For the Provolone Sauce:

    2 tablespoons unsalted butter

    2 tablespoons all-purpose flour

    2 cups whole milk

    1 cup shredded provolone cheese

    ½ teaspoon Dijon mustard

    Salt and pepper to taste

    Instructions:

    1. Cook the Tortellini:
    Prepare tortellini according to package instructions. Drain and set aside.

    2. Cook the Beef and Vegetables:

    Heat olive oil in a large skillet over medium-high heat.

    Add the thinly sliced beef, season with garlic powder, smoked paprika, salt, and pepper. Cook until browned, then remove from the skillet.

    In the same skillet, sauté onions and bell peppers until softened, about 5 minutes.

    Return the beef to the skillet and toss with the vegetables. Set aside.

    3. Prepare the Provolone Sauce:

    In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute.

    Gradually whisk in milk, ensuring the mixture stays smooth. Cook until thickened, about 3–5 minutes.

    Remove from heat and stir in shredded provolone cheese and Dijon mustard. Season with salt and pepper.

    4. Combine:

    Toss the cooked tortellini with the beef and vegetable mixture.

    Pour the creamy provolone sauce over the top and mix gently to coat evenly.

    5. Serve:

    Garnish with fresh parsley, if desired, and serve warm.
