    Zesty Cranberry Orange Pecan Muffins

    These Cranberry Orange Pecan Muffins are a delightful blend of zesty citrus, tart cranberries, and crunchy pecans, making them perfect for any time of the day.     Ingredients:

    For the Muffins:

    2 cups all-purpose flour

    1 tsp baking powder

    1/2 tsp baking soda

    1/2 tsp salt

    1/2 cup unsalted butter, softened

    1 cup granulated sugar

    2 large eggs

    1/2 cup freshly squeezed orange juice

    Zest of 1 orange

    1/2 cup buttermilk

    1 cup fresh or dried cranberries

    1/2 cup chopped pecans

    For the Glaze (Optional):

    1 cup powdered sugar

    2 tbsp orange juice

    1 tsp orange zest

    Instructions:

    Prepare the Muffin Batter:

    1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.

    2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

    3. In a large bowl, cream together the butter and sugar until light and fluffy.

    4. Add eggs one at a time, mixing well. Stir in the orange juice and zest.

    5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined.

    6. Gently fold in the cranberries and chopped pecans.

    Bake the Muffins:

    1. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

    2. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

    3. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

    Add the Glaze (Optional):

    1. In a small bowl, whisk together powdered sugar, orange juice, and zest until smooth.

    2. Drizzle glaze over cooled muffins for an extra citrusy kick.

    Cook Time: 20 minutes
    Total Time: 35 minutes
    Yields: 12 muffins
