    Slow Cooker Beef and Cheddar Potato Casserole

     

    Slow Cooker Beef and Cheddar Potato Casserole

     

    This Slow Cooker Beef and Cheddar Potato Casserole is the perfect comfort food for any day of the week! Packed with seasoned ground beef, tender potatoes, and gooey cheddar cheese, it’s a hearty dish your whole family will love. The slow cooker does all the work, making it an easy and stress-free dinner option. Creamy, cheesy, and loaded with flavor, it’s a guaranteed crowd-pleaser. Perfect for busy nights or cozy gatherings!

    Ingredients:

    1 pound (450g) ground beef

    1 medium onion, diced

    3 cloves garlic, minced

    1 teaspoon salt

    1/2 teaspoon black pepper

    1 teaspoon smoked paprika

    1/2 teaspoon dried thyme

    4 cups (600g) frozen hash brown potatoes or diced potatoes

    2 cups (200g) shredded cheddar cheese, divided

    1 can (10.5 oz/300g) cream of mushroom soup

    1/2 cup (120ml) sour cream

    1/2 cup (120ml) milk

    2 tablespoons chopped parsley for garnish

    Instructions:

    Prepare the Ground Beef:
    In a skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked. Drain any excess fat. Add garlic, salt, pepper, smoked paprika, and thyme. Cook for another minute to blend flavors.

    Mix the Casserole Base:
    In a large bowl, combine the hash brown potatoes, 1 1/2 cups of cheddar cheese, cream of mushroom soup, sour cream, and milk. Mix until everything is evenly coated.

    Layer in the Slow Cooker:
    Lightly grease your slow cooker. Spread half of the potato mixture on the bottom. Add the cooked beef mixture as the middle layer. Top with the remaining potato mixture.

    Cook to Perfection:
    Cover and cook on low for 6 hours or high for 3-4 hours until the potatoes are soft and tender.

    Add Cheesy Goodness:
    15 minutes before serving, sprinkle the remaining 1/2 cup of cheddar cheese over the top. Cover to let it melt perfectly.

    Serve and Enjoy:
    Garnish with chopped parsley for a fresh finish. Serve hot and watch your family devour this cheesy, hearty casserole!
