    No-Bake Mango and Passion Fruit Cheesecake – A Tropical Delight!

    Craving a tropical dessert that’s easy to make? This No-Bake Mango and Passion Fruit Cheesecake is the perfect summer treat! With a creamy, mango-infused filling and a tangy passion fruit topping, this cheesecake delivers a burst of tropical flavors in every bite. And best of all – no baking required!

    Ingredients:

    For the Crust:

    250g digestive biscuits

    100g unsalted butter, melted

    For the Filling:

    500g cream cheese, softened

    200g Greek yogurt

    100g powdered sugar

    300ml heavy cream

    1 tablespoon gelatin powder

    1/4 cup cold water

    2 ripe mangoes, peeled and diced

    2 tablespoons lemon juice

    1 teaspoon vanilla extract

    For the Topping:

    Flesh of 2 passion fruits

    Mango slices and mint leaves, for garnish

     

    Directions:

    1. Prepare the Crust:

    Crush the digestive biscuits into fine crumbs using a food processor or blender. Mix the crumbs with melted butter until fully combined, forming the base of your mango passion fruit cheesecake.

    Press the mixture into the bottom of a 9-inch springform pan, creating an even crust. Chill the crust in the refrigerator while you prepare the filling.

    2. Prepare the Filling:

    In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes to bloom.

    In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.

    Add Greek yogurt, lemon juice, and vanilla extract to the cream cheese mixture, and mix until well combined.

    In a separate bowl, whip the heavy cream until stiff peaks form.

    Microwave the bloomed gelatin for 10-15 seconds until dissolved, then quickly stir it into the cream cheese mixture for a smooth and stable no-bake cheesecake.

    Gently fold the whipped cream into the cream cheese mixture, making the filling light and airy.

    Fold in the diced ripe mangoes for that fresh, fruity flavor.

    3. Assemble the Cheesecake:

    Pour the creamy mango filling over the prepared crust and spread it evenly, creating a luscious no-bake mango cheesecake. Tap the pan gently to remove any air bubbles.

    Cover and refrigerate for at least 4 hours or overnight until fully set.

    4. Add the Topping and Serve:

    Just before serving, top the cheesecake with fresh passion fruit pulp for a zesty contrast. Garnish with mango slices and fresh mint leaves for a tropical finish.

     

    Additional Tips:

    Setting Time: Give the cheesecake plenty of time to set in the refrigerator to achieve the perfect texture.

    Serving: For clean slices, dip your knife in hot water and wipe dry before cutting each piece of your no-bake cheesecake.
